Easy one pan breakfast

This is a great recipe for a lazy Sunday morning. Quick, easy and best of all only one pan is used for cooking! This is so versatile,  you can literally add anything you like! We had a vegetarian staying with us so this recipes has no meat. However, bacon or any meat for that matter, would go really well with this.


1tsp coconut oil
1 Onion
2 eggs per person
Spring greens
Assortment of peppers
Mushrooms (optional)
Bacon (or any meat of your choice)
I also used some left over boiled baby potatoes, crushed
Salt and pepper to taste

Fry up the onions in the coconut oil until soft. If you are using raw meat, I would suggest you fry this up before the onions… If the meat you add is already cooked, add it in the pan with your sliced up veg.

Slice up the spring greens, peppers and any other vegetables you are using and add to the pan. Cook until soft. Add salt and pepper to taste.

Crack your eggs  into the pan. Season the top of the eggs and put a lid on. Turn the heat down and continue to cook for another 5 minutes or until the white of the egg is cooked.

Dish up with enough veg for each person and accompany this dish with some pesto mayonnaise or mustard mayonnaise.
