Jooste’s winning sosatie marinade

This is the fabulous winning recipe!! It was inspired by the Kook en Geniet cookbook but changed slightly by mom Jooste. Serve this with a selection of salads and some chilli chutney or the classic Mrs Balls chutney.

I would suggest lamb for this recipe but it would be equally delicious with chicken and when assembling the skewers, alternate meat with dried apricots.

Ingredients:
1/2 tsp oil
2 onions thinly sliced into rings
1 tsp curry powder
1 tsp mazena
1/2 tsp turmeric
2 tsp sugar
1 cup vinegar
1 cup water
2 tsp apricot jam

Method:
Using an frying pan, gently fry up the onions in a little oil for 5 minutes until soft. Mix the rest of the ingredients into a bowl and pour into the pan. Cook for 3-5 minutes until it is slightly reduced. Let it cool off completely. Place your diced meat into the cooled marinade and allow to marinade for as long as you can. Over night if possible.

Assemble your skewers and when ready, cook the meat on the BBQ/braai, constantly basting your meat with the marinade as it cooks. When the meat is cooked through, serve.
